My Cookie Addiction

Hi my name is Marcus Fischer and I am a cookie addict. My cookie addiction started as soon as I was able to eat solid food. I never had a chance. I have been able to wean myself off of most cookies but the one that I have never been able to shake is the delicious pumpkin cookie with a silky cream cheese frosting. My cookie kryptonite consists of a fluffy pumpkin center with a slightly crispy outer shell. The cream cheese frosting gives it the perfect amount of sweetness to pull the whole cookie together in perfect taste bud harmony.

Although I know sharing this deadly addiction with others could be dangerous, I simply must! It just doesn’t feel right keeping this cookie of all cookies from others. BE WARNED: After a single bite nothing else will ever satisfy your taste buds again.

Pumpkin Cookies with Cream-Cheese Frosting

(Recipe makes up to 70 two inch cookies)

  • 2 cups white granulated sugar
  • 2 cups butter-flavored shortening (cut into cubes)
  • 1 15-ounce can pumpkin
  • 2 large eggs (beaten)
  • 2 teaspoons vanilla
  • 4 cups flour (sifted)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground allspice

Optional

  • 2 cups raisins

In a large mixing bowl, cream together shortening and sugar. Add the pumpkin, beaten eggs and vanilla to creamed mixture. Continue beating until all ingredients are well mixed.

In a separate bowl, combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg and allspice. Mix well.

Add dry mixture to the creamed mixture, blending completely.

Add raisins or not!

Drop rounded teaspoons of dough onto greased cookie sheet or cookie sheet covered with parchment paper. Cook in 350-degree oven for 12 – 14 minutes. Cool on rack then frost with:

Cream Cheese Frosting:

Mix the following in a bowl and beat until light and fluffy:

  • 8 ounces cream cheese softened
  • ¾ cup softened butter
  • 3 cups powdered sugar – or more as needed
